Each morning, Don Carlos Restaurant serves an all-you-can- eat buffet breakfast featuring the culinary specialties of Guerrero, the Mexican state that is home to Acapulco.

Guests enjoy a traditional regional breakfast overlooking the Pacific Ocean, serenaded by a native mariachi trio playing musical requests. The dining choices at Don Carlos change daily depending on the availability of fresh produce at the local markets. At the cooking station, the chef creates omelets-to-order. The expansive buffet choices include:

Pescado a la talla, fish marinated in a chili-based sauce before being grilled.

Pozole, a soup traditionally served in clay pottery bowls on Thursdays all across Guerrero, is presented with sides of chicken or pork and always comes with a variety of "fixings" that are added to the soup at the table. The tasty extras may include chopped onions, green chilies, avocado slices, crumbled white cheese, lime wedges and chicharron (crispy pork rinds), as well as spices such as dried oregano or powdered chili piquin (cayenne pepper), adding even more robust flavor.

The Mirador chefs use only local culinary resources, including fresh-off-the-boat fish, shellfish and in-season tropical fruit found throughout the state. These fresh ingredients are almost exclusively native to Guerrero, so dishes remain true to their pre-Columbian roots.

And guests who can`t do without their morning coffee-fix will discover that the Guerrero hills are home to small producers of excellent organic coffees!
